The Hythe Imperial Hotel & Spa are proud to be launching their newly refurbished restaurant aptly named, Coast. This opening reflects a new chapter for the stunning coastal hotel.
Joe Betteridge, Hotel General Manager says, “We have invested in creating a contemporary and modern interior, which has been decorated to a luxurious standard, serving a new seasonal menu, embracing all things local, coastal and high quality.”
The indulgence is in the detail furnishings; fine Italian designed furniture, Villeroy & Boch glassware and crockery, cutlery designed by Robert Welch and a menu with a modern and contemporary British theme. The menu changes daily, reflecting the seasons and their commitment to local suppliers, using the likes of Griggs of Hythe for fresh daily fish and seafood supplies. Meat is locally sourced from Huntleys, Tenterden and free range eggs from Coastal Eggs, Canterbury.
This passion and love for keeping it local and fresh comes from 33 year old Kentish Chef, Tony Borley, whose signature dish is pan seared scallops on samphire. He says, “Growing up in Saltwood, owning a restaurant for 10 years and enjoying a career as a Head chef since I was 19, I am truly proud to be part of this iconic property.” He continues, “Quality produce from Kent is to be enjoyed at Coast, I appreciate the reassurance people will experience in the knowledge that what they are eating is truly local and fresh.”
Andy Cook, Co-Owner of Griggs of Hythe says, “We are delighted to be the main supplier of seafood and fish to Coast Restaurant; we take great pride in supplying the best and finest fresh and smoked fish. Griggs of Hythe look forward to a long term working partnership and are sure people will take pleasure in coming to eat here.”
The Hythe Imperial Hotel hopes this will inspire locals and those already using the hotel’s extensive Health & Golf Club to enjoy traditional Sunday lunches or dinner any day of the week. Joe Betteridge adds, “You can thoroughly enjoy a delicious coastal inspired meal here and then go for a lovely walk along the promenade soaking in the amazing panoramic sea views.”

The restaurant is officially open from Tuesday 26th November.
